Memorial Day Menu

It's almost memorial day weekend! My family always finds a reason to celebrate and memorial day is no different. We love any excuse to gather family and friends, eat great food and enjoy each other's company. Whether you're spending memorial day with family, your roommates, or just with a small group of friends - you can still have a blast!

Any good party is surrounded by the food. I've written out the ingredients and instructions to a full on southern meal that can be had for lunch or dinner. These are some of our go to recipes any time we have a get together!

Mississippi Pot Roast (thank you Brandi Schumann for this recipe!)



Ingredients:

3-4 lb Chuck Roast (beef)

1 stick Butter

1 package Ranch Dressing

1 package Onion Soup mix

3-4 Peppercinini Peppers and a little juice from the jar

Instructions:

Rub roast with black pepper and salt, and brown on all sides in a skillet for 2-3 min. per side. Put into crock pot and add remaining ingredients. Cook on low for 6-8 hours.

Broiled Asparagus and Brussel Sprouts







Ingredients:

2 lbs Brussels Sprouts

2 lbs Asparagus

Olive Oil

1/4 cup Parmesan Cheese

Salt and Pepper

Balsamic Vinegar

Instructions:

Toss Brussels sprouts and Asparagus with olive oil and salt and pepper. Place asparagus and brussel sprouts on separate cookie sheets. Cook brussels at 400 for 30 minutes. Cook the asparagus for 12. Drizzle with Balsamic Vinegar and parmesan cheese after.

Summer Salad w/ Spicy Pecans and Vinegarette Dressing









Ingredients:

Spring Mix Salad

Spicy Pecans- 4 cups Pecan halves, 6 TBS butter, 4 tsp chili powder, 1/2 cup brown sugar. Preheat oven to 350. Toss pecans with melted butter. Sprinkle chili powder over nuts and mix well. Add sugar and toss with hands to mix completely and keep sugar from lumping. Bake for 15 min. let cool. Pecans will be soggy until cooled. Save leftovers in freezer and use on your salad the next day!

Strawberries

Broccoli Slaw

Feta Cheese Crumbles

Instructions:

Mix the salad, Broccoli Slaw, add cut up Strawberries and Pecans and add Feta Cheese Crumbles. Serve with Raspberry Vinaigrette Dressing. You can add apples, cranberries and exchange feta for blue cheese. This salad is a huge hit!

Betty Crocker Crispy Skillet Potatoes

Strawberry Lemonade Cake

Ingredients:

One box of Strawberry cake mix (plus oil, water and eggs and directed on box)

8oz Philadelphia Cream Cheese (softened to room temperature)

1 packet of Kool-Aid Lemonade

Yellow food coloring (use as desired for color)

2 cups Jet-Puffed Marshmallow Creme

8oz. Cool Whip

Fresh Strawberries to garnish

Instructions:

Make cake according to box and bake in 2- 9inch round cake pans as directed. Turn finished cakes over on cake racks and allow to cool completely.

Cream together cream cheese, lemonade and yellow food coloring until smooth.

Mix Marshmallow creme in and then mix in cool whip until completely smooth. Refrigerate until cake is cooled and cut.

Cut both cakes in half (4 layers total)

Alternating layers of cake with layers of filling, assemble cake. End with layer of filling. Top with sliced strawberries and refrigerate. Serve chilled.
